Generally when you erased or lost some iPhone notes, if you synced the phone while these notes were still on it and you haven't synced again since they were deleted, you may be able to recover them by restoring your phone to the last backup which includes your missing notes. This will revert your settings and data to those contained in the backup (not just notes) so be sure to save any more recent data prior to restoring. How to recover lost notes from iPhone using software
Below is step by step guide on how to undelete or restore your iPhone Notes under Windows . If you are Mac OS X users, go to Data Recovery for iTunes for more info.
Please Note: you need to download and install the iPhone Notes recovery program on your computer firstly.
STEP 1 : Launch the application, you’ll see two recovery modes offered: "Recover from iOS Device" & "Recover from iTunes Backup File". If your iPhone is good and can be powered on as usual, choose the first mode; Otherwise, choose the later mode (which works without requiring you to connect your iPhone deivce).
STEP 2 : Select your iPhone, click "Start Scan" and the software begins scanning your iPhone automatically for deleted Notes (& other recoverable files), and the interface turns to be like below.

Note: files found here includes the Notes you have on your iPhone now. If you only want to undelete those from the phone, slide the button in the red area at the bottom (Only display the deleted items). Then mark and recover them.
